Jello For Breakfast Is Always A Good Idea

Happy November! Did everyone enjoy their extra hour last Saturday? I know I did... We had a team building breakfast at work last month and I decided to wing it with a breakfast jello recipe. I had half a big box of Lemon Jell-O in my pantry and a bottle of sparkling grapefruit juice from Trader Joe’s so I decided to make citrus squares. The result was a hit and definitely breakfast appropriate.

6 tablespoons (one small box or half a large box) Lemon Jell-O

2 envelopes Knox unflavored gelatin

2 cups orange juice

2 cups sparkling grapefruit juice

1 1/2 cups sliced strawberries

Soak the Lemon Jell-O and Knox in 1 cup of orange juice while slowly heating up the other cup of orange juice in a saucepan. Dissolve the orange juice/gelatin mixture into the hot orange juice and remove from the heat. Slowly stir in the sparkling grapefruit juice (there will be quite a bit of fizzing, just keep stirring). Pour into a bowl and let firm up in the fridge for about 60-90 minutes until the jello is thick enough to suspend the fruit in. Stir in the strawberries and pour into your mold to set overnight.

I used a 9x13 glass pan for this recipe as I’ve found that people are more amenable to trying jello if it’s cut into squares. Molds (although prettier) tend to make people nervous. Maybe it’s the jiggling?
