I'm in cottage country with friends for a few days of hang time before school starts again (!). One of my besties is a vegetarian so I thought this would be a good opportunity to try the vegetarian jelly mix that my partner's mum turned me on to in the UK.
We don't have much in the way of dishes so I molded this in a small metal saucepan (hey, it worked). We used the raspberry flavor and added a few blueberries for texture. Note that this kind firms up MUCH more quickly than regular gelatin so keep an eye on it. It also firms up with a lot more liquid around the edges so be careful when unmolding!
Again, it's not exactly the same texture as gelatin but it's a very good substitute if you're veggie.
